Thin Crust Chicken Pizza – Indo Italian fusion

Pizza has been one of my favorite food ever since I came to the US, especially the thin-crust pizza. There are innumerable pizza restaurants here, even in this small city. Also, each offer a lot of variety in their pizzas. Yet, I wanted to try an Indian version of my favorite chicken pizza. Hence this recipe.

The chicken used in this recipe is flavored with Indian spices. However, the pizza sauce that i have used, is the same old tomato based Italian pizza sauce. You can use any pizza sauce of your choice, yet it goes very well with this chicken.

Note: This recipe yields a 10- inch thin crust pizza.

Ingredients:
For the Pizza dough:
  1. Instant Yeast – 1 teaspoon (I have used “Red Star” yeast)
  2. Sugar – 1 teaspoon
  3. Salt – 1/2 teaspoon
  4. Warm water – 1/3 cup (around 110°F)
  5. Bread flour (or All purpose flour) – 1 cup
  6. Olive Oil – 2 tablespoons
  7. Garlic – 1 tablespoon (finely chopped – optional)
  8. Basil pesto sauce – 1 tablespoon (optional)
  9. Cornmeal – 1 tablespoon (for sprinkling over the pizza pan)
For the Pizza sauce:
  1. Canned Tomato puree – 1/2 cup
  2. Italian seasoning – 1 teaspoon
  3. Garlic powder – 1 teaspoon
  4. Salt – a pinch
Toppings:
  1. Baked Chicken breast or thighs – 1 cup (cut into 1/2 inch cubes) – Click here for the recipe.
  2. Mozzarella cheese – 1 cup (shredded)
Method:
Pizza dough:
  1. Take 1/3 cup warm water in a bowl, add to it instant yeast, sugar, salt and mix well. Cover the bowl with a lid. Then turn on the oven for the lowest temperature setting for 2 mins and then turn off. Place the bowl inside the oven for 10 to 15 minutes. After 10 to 15 minutes, the yeast foams up as shown in the picture.

2. Then take bread flour in a bowl, add to it the above yeast mixture, olive oil, garlic and basil pesto sauce and mix it with a fork. Garlic and basil pesto is optional.

Then knead the dough for 3 mins and cover it with a lid.

3. Again turn on the oven for the lowest temperature setting for 2 mins and then turn off. Place the bowl inside the oven for 1 hour. By this time the dough would have doubled in size. Try punching the dough or insert 3 fingers into it. If the impression of your hand remain, only then the dough is said to be risen fully, as shown below. Otherwise, allow it rise for another 30 minutes.

Pizza sauce:

4. Mix all the ingredients such as the canned tomato puree, Italian seasoning, garlic powder, salt and keep it ready.

Chicken Topping:

5. I have used “this recipe” for baking the chicken, except for the usage of rice flour and corn flour. In short, I have marinated the chicken (1 inch cubes) in yogurt along with turmeric powder, chilli powder, coriander powder, garam masala, ginger garlic paste, salt, food color, oil and baked in the air fryer for 8 mins. Then again cut into small pieces.

Note: the chicken will not be fully cooked. Since it has to bake along with the pizza once more, we removed it half way through.

6. Assembling and baking the pizza:

Take the pizza dough and roll it into a thin pizza base about 10 inch in diameter. Place the pizza base on top of a pizza pan, after sprinkling some corn meal over the pizza pan. Preheat the oven to 450°F. Par bake the pizza base for 5 minutes and remove it from the oven.

Then, spread the pizza sauce generously over the pizza base. Now add the shredded mozzarella cheese and the chicken and again bake in the oven for 10 to 15 minutes, until the edges turn golden brown in color.

7. Enjoy when the pizza is hot!
