Veg Hakka Noodles (Indian style)

This Vegetable Hakka noodles can be given as an evening tiffin for kids back from school or as lunch. It is very simple and easy to make with few ingredients. Also we can make kids eat veggies in this way.

The veggies that i have included are carrots and cabbage. It should be cut in such a way that, there should be no difference between the thickness of the noodles and veggies( in order to trick the kids 😜). You can also use peas, beans, zucchini etc. And garnish finally with spring onions.

Servings : 4

Ingredients:

  1. Cloves -4
  2. Cinnamon stick – 1 inch
  3. Onions – 3/4 cup (finely chopped)
  4. Ginger garlic paste – 1 tablespoon
  5. Tomato paste – 1 tablespoon
  6. Boiled Hakka noodles – 1 1/2 cups (cooked according to package directions, run it through cold water, strain and mix it with 2 tablespoons oil to prevent it from getting sticky)
  7. Turmeric powder – 1/4 teaspoon
  8. Chilli powder – 1 teaspoon (can be replaced with green chilli also)
  9. Garam masala – 1/4 teaspoon
  10. Salt – as required
  11. Oil – 4 tablespoons
  12. Carrots – 1 cup (thinly shredded)
  13. Cabbage – 1 cup (thinly shredded)
  14. Green onion – 1/4 cup (for garnish, optional)

Method:

  1. Heat oil in a large pan, add cloves, cinnamon stick, onions and saute well until onions turn golden brown.

2. Add ginger garlic paste and saute until the raw smell of the ginger and garlic ceases. Then add the tomato paste and saute well.

3. Now add turmeric powder, chilli powder, garam masala, salt and add 1 cup water. Allow it to simmer for 10 minutes. The chilli powder can be replaced with green chillies also.

4. Then add the veggies and saute on high flame for 4 to 5 minutes.

5. Finally add the cooked Hakka noodles and toss it well.

6. Add green onions for garnish. Serve hot!
