Roasted Red Bell pepper dip

This recipe is not only for kids, but for all those who hate to eat veggies. Once you have tasted this dish, you will definitely want to eat it more and more. Serve this dip with carrots, celery sticks, lightly blanched broccoli etc and see all the veggies disappear in minutes.

This is also good for those who are following keto diet and helps us to eat more veggies. Actually, I hate eating celery sticks. But when I prepare this dip, I do not know how much of celery is going inside me.

Ingredients:

  1. Red Bell Pepper – 1 (big)
  2. Onion – 1/4 cup (roughly chopped)
  3. Garlic – 2 cloves (big)
  4. Olive oil – 1 tablespoon
  5. Italian seasoning – 2 teaspoons
  6. Black pepper – 1 teaspoon
  7. Salt – as needed
  8. Mayonnaise – 3 tablespoons
  9. Cream cheese – 8 ounces (1 cup)

Method:

  1. First, chop the red bell pepper, onions and garlic . Then add olive oil, Italian seasoning, black pepper, salt and mix well.

2. Preheat the Air fryer to 350°F. Add the above contents to the air fryer and roast for 15 to 20 minutes.

3. Cool the roasted veggies and add it to a food processor. Blend it to a coarse consistency. Then add 3 tablespoons mayonnaise and give it a 30 second pulse. No need to add water.

4. Now take the room temperature cream cheese and microwave for 20 to 30 seconds. Then add the above roasted veggie blend and mix well.

5. Serve the roasted red bell pepper dip with veggies.
