Tomato Peanut chutney

This chutney variety is for all the peanut lovers. It combines the tangy taste of the tomatoes along with the roasted flavor of the peanuts. It goes well with idli and dosa. This chutney requires just 15 minutes of your time, if you have roasted peanuts on hand.

One of my friend made this chutney for breakfast when I visited their house. From that time on, I have been making it at home.

Servings : 4

Ingredients:

  1. Oil – 2 teaspoons
  2. Garlic – 3 pods (roughly chopped)
  3. Tomatoes – 1 and 1/2 cup (roughly chopped)
  4. Dry red chillis – 3 (long)
  5. Roasted peanuts – 1/3 cup
  6. Frozen or fresh coconut – 2 heaping tablespoons (shredded)

For Tempering:

  1. Mustard seeds – 1/4 teaspoon
  2. Broken urad dhal – 1/4 teaspoon
  3. Dry red Chiili – 1 (long)
  4. Curry leaves – 5 to 6
  5. Oil – 1 teaspoon

Method:

  1. Heat a pan with 2 teaspoons oil and add the garlic pods. Then add the tomatoes.

2. Saute until the tomatoes turn mushy. Then add the dry red chillis and saute for few more minutes.

3. Allow the tomatoes to cool down. Take a blender, add the roasted peanuts along with shredded coconut. Then add the cooked tomatoes along with little water and blend well. Temper with mustard seeds, urad dhal, red chilli and curry leaves.

4. Serve with hot idlis or dosa!
