Asian style Chicken Udon noodles

This is one of my favorite noodle recipes. Even if you are in a hurry, this noodles can be made very quickly. All you need to do is, a little bit of planning ahead of time. Once you try this recipe at home, I am sure, no one will want to spend extra money in the restaurant. And with no doubt, kids will love this.

When you make this recipe for your friends, you definitely will a get lot of appreciation.

I have used Japanese Udon noodles which is already precooked. But, you can use regular Hakka noodles or egg noodles and cook according to the packaging instruction. Vegetarians can skip the chicken and rest are all the same.

Ingredients:

  1. Broccoli – 1/2 cup (cut into florets)
  2. Carrot – 1/4 cup (cut into long thin strips)
  3. Cabbage – 1/4 cup (cut into long thin strips)
  4. Garlic – 1 tablespoon (finely grated)
  5. Ginger – 1 tablespoon (finely grated)
  6. Green onion – 3 (chopped)
  7. Sesame oil – 1 tablespoon
  8. Cooking oil – 1 tablespoon
  9. Chicken broth – 1/2 cup
  10. Soy sauce – 3 tablespoons
  11. Hoisin sauce – 1 tablespoon
  12. Leftover cooked chicken – 1 cup (cut into cubes)
  13. Japanese Udon noodles – 400 grams (cooked, approximately 1.75 cups)
  14. Black pepper – 1/2 teaspoon
  15. Salt – as required

Method:

  1. First, cut all the veggies and keep it ready.

2. Next, cut the cooked chicken into cubes and also prepare the sauce. I marinate the one-inch cubed chicken pieces (about 250 grams) with 1/4 cup yogurt, 1/4 teaspoon turmeric powder, 1 teaspoon salt, 1 teaspoon oil and bake in the oven at 350 F for 10 to 12 minutes. For the sauce – mix sesame oil, chicken broth, soy sauce, hoisin sauce together in a bowl and keep it ready.

3. Now, heat cooking oil in a large pan, saute garlic, ginger and green onions for a minute. Then add all the remaining veggies and saute for about 5 minutes on medium-high flame. A pinch of salt and 1/2 teaspoon black pepper can be added at this moment. No more salt is required, since the soy and the hoisin sauce already contain salt.

4. Now add the cooked chicken, cooked udon noodles and the prepared sauce.

5. Stir the contents until all the sauce gets absorbed into the noodles, for another 3 to 5 minutes.

6. See how fast this can be prepared. All you need to do is, have the veggies cut and chicken cooked already. Then, this meal can be pulled out in 15 minutes. Serve hot and enjoy!
