Veg Fried Rice
Every time I go to a Chinese restaurant, I do not miss out the fried rice in the buffet section. I am so obsessed with its taste and tried to make it at home with few simple ingredients. Needless to say, it was a hit!
However, there is an edit to the restaurant version. Guess what – I have added more veggies.

Ingredients:
- Onion – 1/4 cup (finely chopped)
- Ginger – 1 tablespoon (finely grated)
- Garlic – 2 tablespoons (finely grated)
- Green onions – 3 stalks (chopped)
- Red Bell pepper (red capsicum) – 1/4 cup (chopped)
- Carrot – 1/4 cup (chopped)
- Peas – 1/4 cup
- Broccoli florets – 1/2 cup
- Black pepper – 1 teaspoon
- Soy sauce – 2 to 3 tablespoons
- Chilli garlic paste – 1 tablespoon
- Salt – as required
- Oil – 3 tablespoons
- Cooked Basmati rice – 1 cup
Method:
- Start by chopping all the veggies required for this dish.
2. Also keep ready the below 2 ingredients. This dish is not called a fried rice if these 2 ingredients are absent.
3. Then, heat oil in a large pan or wok and saute the garlic, ginger, onions and the white portion of the green onions. The flame should be Medium-High, so that all the veggies cook faster. The total time to cook this dish is less than 10 minutes. Saute until onions turn golden brown, then add bell peppers.
4. Saute the bell pepper for 2 minutes. Then add the remaining veggies, soy sauce, chilli garlic paste, black pepper and salt. Sprinkle some water over the veggies and saute for 5 minutes. Don’t let the veggies burn.
5. The veggies should be cooked and crunchy as well. Switch off the stove, add the cooked basmati rice and mix well.
6. Serve hot. In addition to the veggies, scrambled eggs can also be added to the fried rice.
