Masal Vadai (Parupu vada)

Masal vadai is a famous south indian snack loved by all. Very few ingredients are required to make this delicious snack. All you need to do is soak the channa dhal for 1.5 hours. Then the following steps can be made quickly without any hassle.

Servings: 30 vadais

Ingredients:

  1. Channa dhal – 2 cups
  2. Fennel seeds – 2 tablespoons
  3. Garlic – 5 cloves (crushed)
  4. Ginger – 1 tablespoon (finely chopped)
  5. Onion – 1 cup (finely chopped)
  6. Green chilli – 2 medium (finely chopped)
  7. Coriander leaves – few sprigs (roughly chopped)
  8. Salt – as required
  9. Cooking oil for deep frying – 750 ml (varies depending on the size of your vessel)

Method:

  1. Clean and soak the channa dhal for 1.5 hours.

2. Cut the onions, ginger, coriander leaves, green chillis and keep it aside. Also crush the garlic cloves.

3. Drain the water from the soaked channa dhal. Put it in a blender along with some salt and just give a “2 second” pulse.

4. Then add garlic, fennel seeds and the blend it for few seconds until it reaches a coarse consistency as shown in the picture.

5. Finally add ginger, onions, coriander leaves, green chillis, salt and mix it well.

6. Heat oil in a kadai. The vessel I used is a flat bottomed one, hence more oil is needed. If you use a curved vessel, oil usage can be minimized. Side by side, make round balls using the prepared vadai mavu (vada batter). Just place the palm of your hand little above the kadai to feel the heat of the oil(dont keep the hand too close). That means the oil is hot. Once the oil is hot, flatten the vada balls as shown in the picture and drop it into the oil gently. If the oil is not hot, the vadas absorb too much oil. And if the oil is too hot (fumes coming from it), the vada turns into brown quickly, but the inside will remain uncooked.

7. Cook the vadas until golden brown for 4 to 5 minutes by gently flipping them after 1 minute intervals.

8. Gently remove them from the oil and place it in a container lined with tissue paper to remove excess oil. Serve hot. These vadas go well along with Masala Chai. Enjoy!
