Tiffin Sambhar usually goes well with Idly, dosa, pongal and upma, especially for breakfast. It is very easy to prepare and literally all the ingredients can be thrown into the cooker without having to saute onions, tomatoes etc.

Me and my husband used to soak each and every bit of the idly into the sambhar and devour it. Whenever i use to make this sambhar, we end up eating more idlys.

Servings : 4

Ingredients:

  1. Toor dhal + Moong dhal – 1/3 cup
  2. Onions – 1/2 cup (finely chopped)
  3. Tomatoes – 1/2 cup (chopped)
  4. Ginger – 1 tablespoon (finely chopped)
  5. Green Chilli – 1 (medium size)
  6. Sambar powder – 1 tablespoon
  7. Turmeric powder – 1/4 teaspoon
  8. Asafoetida powder – a pinch
  9. Salt – as needed
  10. Mustard seeds – 1/2 teaspoon
  11. Urad dhal – 1/2 teaspoon
  12. Curry leaves – few sprigs
  13. Oil / Ghee – 3 tablespoons

Method:

  1. Wash the toor dhal and moong dhal; put them into the instant pot along with turmeric powder, 1.5 cups water, a teaspoon of oil and pressure cook for 12 minutes. The quantity of toor dhal should be more than the moong dhal. After the pressure is released, add the onions, tomatoes, ginger, green chilli, sambhar powder, asafoetida and salt.

2. Then add 2 cups water, mix well and pressure cook in the instant pot for 8 minutes.

3. Heat oil or ghee in a tempering pan, add the mustard seeds. Once they start to splutter, add the urad dhal and the curry leaves.

4. Add the tempered contents and finely chopped coriander leaves to the sambhar once the pressure is released from the instant pot.

5. This sambhar will be of watery consistency only. Serve with hot idlys or pongal. Enjoy!
