Mushroom Bell Pepper Sandwich
I used to make sandwich whenever we go out for a picnic or road trip, but it will either be with meat or potatoes. My husband felt it was boring to have the same kind of sandwich every time. Hence I decided to try a vegetarian sandwich which has a “Meaty” texture and at the same time gives you the satisfaction of having eaten a whole bunch of veggies.
It does not only contain Mushrooms and Bell peppers, but also CHEESE! That should not be omitted if you want your kids to eat veggies. The ooey-gooey cheese makes it more appetizing and mouth-watering to them. You could also include any other vegetable of your choice.

Ingredients:
- Onions – 1/4 cup (finely chopped)
- Green Bell Pepper (capsicum) – 1/2 cup (chopped)
- Mushrooms – 1 cup (chopped)
- Black pepper powder – 1/2 teaspoon
- Chilli powder – 1/2 teaspoon
- Cumin powder – 1/2 teaspoon
- Chaat masala – 1 teaspoon
- Garlic powder – 1 teaspoon (optional)
- Salt – as required
- Cheese – 3/4 cup (grated)
- Pesto pasta sauce or Mint chutney – 3 tablespoons
- Butter – 2 tablespoons
- Oil – 1 tablespoon
- Sandwich bread – 6 slices
Method:
- Heat oil in a pan and saute the onions on medium flame for 3 minutes. Then add the green bell peppers and saute for 5 minutes.
2. Then add the chopped mushrooms and saute until they shrink in size. Now add, black pepper powder, chilli powder, cumin powder, chaat masala, garlic powder, salt and saute for few more minutes.
3. The sandwich is ready to be assembled. I use a panini maker for this purpose. Grease one side of the bread with some butter and spread the Pesto pasta sauce or any left over mint chutney on it. Place generous amount of the mushroom filling over it.
4. Then sprinkle grated cheese over the mushroom and close the sandwich using another bread slice greased with butter.
5. Grill the sandwich in the panini maker for 4 minutes approximately, until all the cheese is melted. Look how the sandwich has beautiful grill marks over it. Yummy!
6. Serve hot and enjoy!
