Veggie Quesadilla
Quesadilla is a Mexican dish which is basically a roti (otherwise called tortilla) with a variety of fillings. The main filling is cheese with vegetables, beans or meat. The filling is prepared and placed in between two rotis and grilled. It can also be cooked on a stove top using a tawa or sandwich maker.
This recipe is so simple to do and kids will love it, since it contains CHEESE. Any vegetables can be used, but onion and bell pepper is a must. Since they give a very distinct flavor to the dish.

Ingredients:
- Onion – 1/4 cup (finely chopped)
- Red bell pepper (capsicum) – 1/4 cup (finely chopped)
- Sweet corn kernels – 1/4 cup
- Paneer – 1/4 cup (shredded)
- Chilli powder – 1/2 teaspoon
- Garlic powder – 1 teaspoon (optional)
- Dried Oregano – 1/2 teaspoon
- Cumin powder – 1 teaspoon
- Salt – as required
- Oil – 2 tablespoon
- Butter – for greasing the sandwich maker
- Rotis – 3 (which is already prepared)
- Grated Cheese – 3/4 cup (any type of cheese)
Method:
- First we need to prepare the filling. Heat oil in a pan and saute onions until golden brown. Then add bell peppers and saute on medium flame for 5 minutes.
2. Then add the sweet corn kernels and all the spices along with salt. The garlic powder can be substituted with crushed garlic and it can be sauteed along with onions in the first step.
3. Then add the paneer and saute all the contents until they are mixed well for 4 minutes.
4. The filling is ready now. Pre-heat the sandwich maker, grease it with butter and place one roti on it. Then, place the filling and grated cheese on one one half of the roti.
5. Then fold the roti as shown in the picture and close the sandwich maker. Open after 5 minutes. By that time, the cheese would have melted and the outside of the quesadilla will have beautiful grill marks.
The quesadilla should be crispier. The more crispy, the more tasty quesadilla.
6. Now, it is ready to be served with sour cream.
