Instant Pot Keerai Kootu (Spinach with lentils)
This kootu recipe is slightly different from the cabbage kootu that i posted earlier. This one contains coconut along with cumin seeds and dry red chillies. It tastes great with rice and roti. Even picky toddlers who do not like spinach, will love to eat this kootu.

Ingredients:
- Moong dhal – 1/3 cup
- Spinach or any other greens – 1.5 cups (chopped, tightly packed)
- Onion – 1/4 cup (finely chopped)
- Garlic – 4 cloves (chopped)
- Coconut – 1 heaping tablespoon (grated or chopped)
- Cumin seeds – 1 teaspoon
- Dry red chilli – 1 (big)
- Turmeric powder – 1/4 teaspoon
- Sambhar powder – 1 tablespoon
- Salt – as required
- Oil – 1 tablespoon
Method:
- Take the inner pot of the instant pot and add oil, washed moong dhal, spinach, onions and garlic.
2. Grind coconut, cumin seeds, red chilli along with little water to a fine paste consistency.
3. Add the blended coconut paste, turmeric powder, sambhar powder, salt and 1.5 cups water to the instant pot and mix all the contents well.
4. Pressure cook in the instant pot for 13 minutes. No tempering is required. Serve hot with rice or roti.
